Grilled Peach and Spinach Salad
This grilled peach and spinach salad is a great summer dish, when peaches are in season. Serve it with a meal as an appetizer or side dish or add protein like grilled chicken to make it a main dish.
Ingredients
- 2 Peaches large, ripe
- 2-3 Cups Spinach fresh
- 1/2 Cup Broccoli Micro Greens
- 1/3-1/2 Cup Pecans raw, unsalted
- 1 tsp Ghee
- 1/4 tsp Ceylon Cinnamon
- 1-2 Tbsps Pure Maple Syrup
- 1 Lemon juiced
- 2 Tbsps Extra Virgin Olive Oil
- 3 Tbsps Goat's Cheese soft
- 1/4-1/3 Cup Balsamic Vinegar
- Salt & Pepper
Instructions
- Peel and slice the peaches.
- Heat a cast iron grill pan or outdoor grill to medium-high heat. Lightly coat the surface with avocado oil to prevent sticking.
- Grill the peach slices for a couple of minutes on each side, until grill marks show and peaches are warm. Set aside.
- In a small bowl, combine lemon juice, extra virgin olive oil, and salt & pepper. Whisk until emulsified. Set aside.
- Heat a small frying pan over medium heat. Once hot, add ghee and tilt the pan to coat it. Add pecans and gently stir with a spatula. Next, add cinnamon and stir again. Finally, add maple syrup and stir until the pecans are fully coated. After several seconds, remove from heat and set aside. The pecans will toast very quickly and can burn easily if left on the stove for too long.
- Heat a small saucepan over medium-high heat. Add balsamic vinegar and reduce the heat to low. Allow to simmer for a few minutes, until thickened. The vinegar should be thick enough to coat the back of a spoon. Remove from heat and set aside.
- Toss spinach leaves with the lemon juice and olive oil dressing and place on a serving platter. Evenly distribute the peaches and pecans over the spinach. Break up the goat's cheese and sprinkle it over the spinach, peaches, and pecans. Next, sprinkle the micro greens down the center of the salad. Finally, evenly drizzle the balsamic vinegar reduction over the salad in a zig-zag pattern.
- Serve as a side dish or add protein, if desired.
Notes
For a plant-based version, try substituting coconut oil for ghee and eliminating the goat’s cheese.
